Fabulous Breakfast recipe for a group
Make this the night ahead and bake for 1 hour (or so) on 350 serve with sour cream and salsa. Add a side of fruit if you want to get fancy. :0)
Breakfast Pie (potato and egg casserole)
8 eggs
2 cups milk
1 tsp. salt
1 tbsp. dry mustard
1 to 1-1/2 lbs reg sausage/or bacon/or any meat you like for breakfast
1 pkg frozen potato patties/or you can layer the bottom of the dish with tator tots
1 lb shredded jack/ cheddar cheese or your fave cheese
Beat eggs, milk, salt and dry mustard. Cook meat and drain. Place potato patties or tator tots in bottom of a 9 x 13 pan. Add meat and cheese pour egg mixture over top and refrigerate overnight. Next morning bake @ 350 degrees for 45 minutes to one hour. Put foil on for cover-last 10 minutes if necessary. Serves 6 – 8.
Terri’s tips:
This is a great company or Sunday morning breakfast, because you make it a day ahead. Cut up some fruit and have toast or muffins, and you have a brunch!
It warms up well in the microwave, so the leftovers make a great lunch. Meat can be substituted with bacon, link sausage or even ham for a change of pace.
It would even work as an evening meal or a great meal to take to someone recovering or with a new baby. Be careful though – before it is cooked it will definitely remain runny!

Fabulous lemon drop recipe!!
Lemon Drop Kit
(makes 2 batches)
1 batch makes about 6 martinis
2 ½ Lemons (each cut into fourths)
1 Lime (cut into fourths)
½ cup Sugar (one container)
½ fifth of Citrus Vodka
Lots of Ice cubes
In the 2 quart container, squeeze each piece of lemon into container and then drop each piece in to the container.
Squeeze each piece of lime into container, and then drop each piece in to the container.
Pour in the ½ cup (1 container) of sugar
Fill container with ice
Pour in ½ fifth of Citrus Vodka
Seal container and shake for several minutes until well mixed and chilled.
Pour into sugar rimmed martini glasses
